Who would have thought…

They earlier you wake up the more you can get done.

Well I obviously knew that, but it really does make sense to wake up earlier when you have a never ending to-do list and not enough hours to get it done!

SO MUCH TO DO!

Breakfast:

this mornings breakfast has been what has been a staple for the past few weeks… pumpkin protein oatmeal... we lots of peanut butter!… everything just tastes better with a big spoonful of pb 🙂

Today in class we had an assignment were you modify a recipe to make it healthier, this is one of my favorite things to do! My partner had mentioned having a really fatty potato recipe from her mom, so we decided to remake that.  And I have to say the modification turned out DELISH!

This was also a fairly easy reicpie to make, AND its somewhat fall-esk, which was an added bonus!

Ingredients

5 medium red yams
4 hard boiled egg whites
1 cup red onion
2 whole dill pickles
1 cup greek yogurt
5 tbsp spicy brown mustard
2 tbsp fresh parsley
1 tsp paprika
Pepper to taste
1 tbsp olive oil

Directions

Cool potatoes and cut into bite sized pieces

Cut hard boiled eggs into small pieces

Chop onion finely

Cut pickles into small pieces

Mix into bowl

Add yogurt and mustard and olive oil and mix together

add spices and herbs

it may look gross…. but I promise.. its amazing!
