Pumpkin Spice Cake

The other day was this one’s birthday!

So we made her a healthier spice cake to enjoy!

Pumpkin Spice Cake

  • 2 1/2 cups whole wheat flour
  • 1/4 cup cornstarch
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cloves
  • 1 (15oz.) can pumpkin (not pumpkin pie mix)
  • 3/4 cup egg substitute
  • 1/3 cup unsweetened applesauce
  • 1/3 cup water
  • 1/2 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
– Mix all the dry ingredients
– add the wet ingredients
– mix well
– cook for 30 minutes or until toothpick comes out clean
– add frosting of choice!

We made a honey apple cinnamon cream cheese frosting inspired by this recipe

the frosting:

-4oz- reduced fat cream cheese
– 2 tbsp honey apple butter
– 1 tsp cinnamon
– 1/2 cup powdered sugar
mix all together, add powdered sugar to taste

It turned out pretty well. Its definitely a more dense cake because of the pumpkin, and the whole wheat flour but still tasty!

Patrisha was pretty excited too 🙂

    yum!! I looks great and Iove all the wholesome ingredients. That’s my kind of cake!
